The perfect grab-and-go muffin in the morning or any time of day!


1 3/4 cups Flour

1/4 cup Brown Sugar

1/2 cup White Sugar

1 tsp Baking Soda

2 tsp Cinnamon

1/4 tsp Nutmeg

1/4 tsp All Spice

1/2 cup Coconut Oil, melted

1 tsp Vanilla

1 15 oz can Pumpkin puree

2 Eggs


  1. Preheat oven to 375 degrees.

  2. Mix dry ingredients in a large bowl.

  3. Mix wet ingredients in a medium bowl.

  4. Add wet ingredients to dry ingredients. Do not over stir. 

  5. Line muffin tray with paper liners.

  6. Add 1/3 cup of batter to each well. 

  7. Bake at 375 degrees for 20-22 minutes.
